I have not been tempted by Proust.
I know more of Berlin's world than I like.

A New Mexican Restaurant That Doesn’t Skimp on the Spice

To celebrate the opening of the Mexican chain’s fifth location, Tacombi West Village, its chef shares a recipe for sopa de lima.

Sopa de Lima
Yield: 6-8 generous servings.
For stock:
1 2.5-to-3-pound whole chicken trimmed of any excess fat
2 white onions cut in quarters
3 plum tomatoes, cut in half
1 habañero chile, cut in half (seeding optional)
1 head of garlic, cut in half (no need to peel)
6 quarts cold water
1 tablespoon black peppercorns
1 teaspoon cumin
2 whole cloves
2 allspice berries
1 tablespoon Mexican oregano
4 limas, cut in half: These are special limes from the Yucatán peninsula that are incredibly fragrant and take on a completely different flavor than traditional limes — a little sweeter, sour but not bitter. If you can’t find limas, which are very hard to come by in the States, substitute 3 limes and the juice of one orange.
1. In a pot large enough to hold the chicken, add it whole, cover with water and add all the vegetables, garlic and spices. (Do not add the citrus; that will be added at the end of the cooking process.)
2. Bring the pot to a simmer over medium-high heat — do not let it boil, which will make your stock cloudy and muddle the flavors. Cook until the chicken is cooked through, which should take about 45–60 minutes.
3. During the last 15 minutes, give the limas (or limes and orange) a little squeeze, then drop them in whole. Turn off heat. Remove chicken and allow to cool.
4. Let stock cool for about 15 mins, then pass through a fine sieve and set aside. Discard vegetables.
5. While stock is cooling, reinforce the stock using the same pot.
To reinforce the stock:
1 white onion, julienned
3 plum tomatoes, roasted on a plancha or grill until skins are lightly blackened, then roughly chopped
2 poblano chiles, roasted until lightly blackened and seeded (no need to peel), roughly chopped
2 tablespoons grape seed oil or manteca (rendered pork lard)About 1 tablespoon kosher salt
1. Over medium heat, add onions, tomatoes and poblanos. Cook about 5 minutes, stirring regularly, then add the salt. When the onions are soft, add the stock made in the previous steps. Allow this to come to simmer.
2. Reduce heat to low and season with salt. You can also add more lima (or lime and orange) juice at this point to achieve desired acidity.
3. While soup is cooking, shred chicken and add back into soup.
4. Check seasoning for salt and acidity.
5. Garnish soup with fried tortilla strips or fresh corn tortilla and sliced rounds of lima. And of course, to kick it up a bit, add a little fresh habañero (diced), salt and a little fresh lime juice.

I can make it if you can find a group to eat it.

California is still in drought.
Water is a "common" resource.
In our culture its use should be regulated by market pressures.
The conservation goal is probably mistaken.
