Ever since it became obvious that inequality was rising — way back in the 1980s — there has been a fairly substantial industry on the right of inequality denial. Eaten with cottage cheese and raspberry jam.
I found that separated eggs and whole wheat flour with a glug of canola did the pancakes and waffles.  Crepes needed dry milk at double strength with the egg and flour.  Do not forget a touch of salt.
